We bring carts and stations that work at this scale. A floral arched dessert counter. A live golgappa station that the kids will line up at. A chai cart that the elders gravitate to. None of it is pulled from a wedding template that was too big to begin with.
And our catering manager is in the room, not just on the phone. If your aunt wants the dal a touch less spicy, we will adjust it in the next batch.
